Appassimento is affectionately called "Baby Amarone" style, because it involves the same process of drying the grapes before fermentation as in Amarone wine making.

The difference is that, while the grapes for AMARONE are dried for about 3 months, the grapes for APPASSIMENTO are dried for just about 1 month.

So you can feel the appassimento wines having the similar profile to Amarone, but not as heavy and full bodied.

Despite that, Appassimento wines are much richer than most wines, and display a delicious, and rich ripe fruit flavors which many wine lovers fall in love with.
